This December, we will be serving spinach several times, so you may be interested in some of its health benefits. Spinach is high in vitamins K and A, and it is also a good way to get your folate, fiber, and a bit of vitamin C and iron. Of course, you should talk to your doctor before making any major changes to your diet, and people on certain medications need to limit their intake of dark green vegetables (such as spinach!). However, if a meal served with spinach sounds good to you, it is on our Kirk Cafe menu December 15th and December 22nd.
